Teriyaki Salmon Foil Packs

I love foil packs! They are easy. The clean up is easy. And it leaves the meat so tender and juicy. I saw various versions of this recipe on Pinterest. I decided to attempt this myself! I added mushrooms and I seasoned my salmon.

I absolutely loved this! I made this before and used store bought teriyaki sauce. This time I made my own teriyaki sauce. #WorthIt

This was easy enough but I had to really search for some of the ingredients. I went to various stores but I got everything that I needed.

You can use the vegetables of your choice. I used broccoli, carrots, and mushrooms. I think asparagus would be good too.

You can pair this white or brown rice. I paired my serving with white rice. My husband wanted his with tri color fusilli. It's good no matter what you pair it with!

​Let's get cooking!
Ingredients:

Salmon and Vegetables:
1 head of broccoli cut up small
1-2 cups carrots cut up small
1/2 cup of mushrooms 
Olive Oil to coat vegetables
4 pieces of Salmon (2-3 finger width)
Seasonings of Choice for salmon
4 pieces of aluminum foil to wrap salmon and vegetables in

Teriyaki Sauce:
1/3 cup Soy Sauce
5 TBSP Water, 3 TBSP and 2 TBSP
1/4 cup honey
1 1/2 TBSP Rice Vinegar
4 Cloves Garlic, chopped finely
1 TBSP Ground Ginger
1 TSP Sesame Oil
2 1/2 TSP Cornstarch

 onDirections:

1. Preheat oven to 350F.
2. Season salmon. Set aside.
3. In medium sauce pan over medium heat combine all ingredients for teriyaki sauce EXCEPT 2 TBSP Water and cornstarch.
4. Whisk and let simmer.
5. In small bowl, whisk 2 TBSP water and cornstarch.
6. Add cornstarch to sauce pan.
7. Whisk and let boil.
8. Let cool for 5 minutes.
9. Coat vegetables in Olive Oil.
10. Season vegetables.
11. Place spoonfuls of vegetables on each piece of aluminum oil. (Divide evenly among 4 pieces of aluminum foil.)
12. Rub teriyaki sauce on bottoms of salmon.
13. Place 1 piece of salmon on top of veggies.
14. Pour some teriyaki sauce on top of salmon and veggies.
15. Close aluminum foil and place on baking dish or in casserole dish.
16. Bake for 20-25 minutes.
17. Pair with side of your choice and ENJOY!
